Commonly known as lengua in Spanish or gyutan in Japanese, it's a highly prized delicacy across global cuisines, celebrated for its rich, buttery flavor and melt-in-your-mouth tenderness. Because the tongue is a heavily used muscle, it is naturally high in fat (accounting for up to 72% of its calories) and packed with collagen, which breaks down beautifully during slow cooking.

Core Cooking Steps

  1. Clean: Rinse thoroughly under cold running water.
  2. Simmer: Place the whole tongue in a large pot or slow cooker filled with water, salt, garlic, onions, and bay leaves. Simmer on low for 3 to 4 hours (or 60–80 minutes in a pressure cooker) until a fork slides easily into the center.
  3. Peel: Remove the tongue while hot. Let it cool just enough to handle, then use your fingers or a knife to strip away the tough, leathery outer skin. Note: The skin only releases easily if the meat is fully cooked.
  4. Slice & Finish: Trim any excess gristle from the base. Slice against the grain into discs or dice into cubes. You can eat it immediately, or sear the pieces in butter or oil for an excellent crispy texture
